This month feature is Bacardi. Heres a few recipes using Bacardi products.

Bacardi Bahama Mama

3 parts Bacardi Superior or gold rum, 1 part Bacardi 151 Run, 1 part Bacardi coco, 1 part coffee liqueur, 1 part Rose's lime juice, 3 parts sweet and sour mix, 6 parts pineapple juice. Shake with ice and pour into tall glass, garnish.

Bacardi Limon Cosmo

3 parts Bacardi Limon, 1 part lime juice, 2 parts triple sec, 1/2 part cranberry juice.  Shake all ingredients with ice and strain into chilled martini glass, garnish.

Bacardi O Chocolate Martini

2 parts Bacardi O, 1 part creme de cacao.  Shake all ingredients with ice and strain into martini glass, garnish.

Chocolate Razzberry Truffle

1 part Bacardi Razz, 1 part white creme de cacao, 1 part vodka, 1 part heavy cream.  Shake all ingredients with ice and strain into chilled martini glass, garnish.

 

Ciclon spiked Salsa

2 tbsp. Ciclon Tequila Spiked Rum, 2 cups chopped tomato, 1 cup chopped onion, 1/2 cup chopped fresh cilantro, 1/3 cup chopped peeled avocado, 1/2 tsp. kosher salt, 2 garlic cloves, 1 cup black beans or 1 cup corn, combine all ingredients in a bowl, tossing gently.

Bacardi Razzberry Mousse

1/2 cup Bacardi razz, 2 pkgs. unflavored gelatin, 1/2 cup water, 1-10 oz. pkg. frozen strawberries, thawed, 1 cup sugar, 2 1/2 cups whipping cream, divided. raspberries and or sliced fresh strawberries, for garnish. Soften gelatin in water, then heat over low heat until gelatin is dissolved.  Cool to room temperature.  Puree strawberries in food processor or blender.  Add sugar and mix well.  Transfer to a mixing bowl and stir in cooled gelatin.  Place in refrigerator until the mixture starts to set.  Whip 1 1/2 cups of the cream.  Remove strawberry mixture from refrigerator, add Bacardi Razz and mix well.  Fold in whipped cream. Pour into a 2-quart souffle dish or serving bowl. Refrigerate until firm.  Whip the remaining 1 cup cream. Garnish.
